What inspires you every day?
My Family. Their unwavering support and love I receive from my family, specifically my wife and two daughters. They are my constant source of motivation, encouragement, and inspiration. Seeing their smiles, witnessing their growth, and being a part of their lives gives me a deep sense of purpose and fulfilment.
What are the signature dishes that you created for Conrad Dublin?
One of the signature dishes I created for Conrad Dublin is the “Irish Crab Meat in Cucumber Cannelloni.” This exquisite dish features fresh Irish crabmeat delicately wrapped in thinly sliced cucumber, creating a unique cannelloni-like presentation. The combination of the sweet and delicate crabmeat with the refreshing crunch of the cucumber creates a delightful palate and texture contrast. To elevate the dish further, I added elements such as apple and avocado. The crispness of the apple complements the umami of the seafood, while the creamy avocado adds richness and a smooth texture. Additionally, artichoke crisps incorporated to provide a savory and crispy element to the dish.
To tie all the flavors together, a zesty citrus dressing is drizzled over the dish. The tangy and bright citrus notes enhance the freshness of the ingredients and bring a vibrant taste profile to the overall composition.
Where did you begin your culinary journey?
In My Motherland Estonia. Studied in small city and moved into the capital, in Tallinn, to expand my horizons. The vibrant food culture and rich culinary heritage of Estonia provided an amazing ground for my growth as a chef. I was inspired by the traditional Estonian taste and techniques, which I incorporated into my own creations while also exploring international culinary influences.
If your menu were a storybook, what kind of story would it be telling?
It would be Rock ‘n’ Roll from start to finish. Each dish on the menu would represent a different chapter in this musical journey, capturing the essence of rock music through flavors, presentations, and emotions. Just like rock music, cooking is an art form that ignites the senses and evokes powerful emotions. The menu would take diners on a culinary adventure filled with bold and vibrant flavors, unexpected combinations, and thrilling culinary techniques. The storybook menu would transport diners on a thrilling gastronomic journey, leaving them with a sense of excitement, satisfaction, and the lingering taste of rock ‘n’ roll.
What’s your personal favorite dish on the menu?
They all great. As I have soft spot for sweets, the potato dessert in our menu stands out for me. Created by one of our chefs and executed perfectly, combining unexpected flavors and textures, highlighting the versatility of potatoes, which are typically associated with savory dishes, in a delightful and surprising way.
Has cooking always been your passion?
Absolutely. All started from my grandmothers bread making during the weekends. The joy and fulfillment in the art of creating delicious dishes, experimenting with flavors, and sharing with friends, family and costumers. You can create memorable experiences with food.

Listen and practice. Pay attention to experienced chefs and mentors, absorb their knowledge, and learn from their expertise. Actively listen to instructions, feedback, and advice. Also, practice your culinary skills consistently to improve your techniques and develop your own style. Embrace your mistakes and learn from them. Do not be afraid of making mistakes in the kitchen. Mistakes are valuable learning opportunities that can help you grow and refine your skills. Ask Questions. Curiosity is essential in the culinary world.
